To cram for a a vacation really fast, listen to the CD in the Berlitz Spanish Travel Pack (Book and CD). Lots of bookstores have it + amazon.
Listen to the CD as many times as you can. I listened in the car. You can also read-off the tracks to MP3s and play them on your PC or on an MP3 player of course. An MP3 player lets you learn anywhere in all your spare minutes. Supplement it by reading sections from the phrase book that you think you'll use, such as the menu-reader.
If you don't have an MP3 player, you can buy a dirt cheap 128MB USB Flash-drive MP3 Player on eBay and listen to the lessons before you go and take it with you on vacation along with the phrase-book to revise and learn topics and phrases you didn't think you needed. Also it doesn't matter if you lose a $20 player.
Read the pronunciation guide for all the letters/combinations and where the stress is placed in a word.
The BBC has a good online audio course. see link.
Read about the formal usted form of 'you' and the informal 'tu' form for friends and children.
From the phrase book or websites, learn the basics :-
Yes/no (Si/No)
Please/Thank You
Hello/Goodbye
Numbers 0-10 and a bit more if you can
My name is....John
I would like....a beer, 2 beers, a table for 4, the check please, etc.
Can I have....
Where is....
There is (Hay)....
Is there (Hay)...a good restaurant/bar/hotel/music club near here
I want (quiero...)/Do you want (quieres)...a drink/something to eat?
I need...(necesito...)
Info about where you're from, your family, your job, etc.
You'll find with 100 or so words, you can get across what you want to say in all sorts of situations using just the words you know.
The BBC has good online courses for beginners upwards. see link. Spanish Quick Fix has MP3 downloads of basic phrases, etc. see tabs.

These days you can learn how to speak Spanish over the internet. Check out this online course, it's voted as the best Spanish online course of all time: http://www.rocketlearner.com/spanish The course is very easy to follow, I was able to learn Spanish in just 3 months.
I live in New York City, I wanted to go to a Spanish language teacher but that would have cost me over $800 per month. Good thing with this internet, $800 it's a lot of money for me.

I have been asked this many times! Here you go..
First get a list of 2000 words that are the same in Spanish and English. They are called cognates. reservation, alcohol, automovil, hotel, doctor, etc.
Then.. only learn the 3 most important verbs..I HAVE, I WANT, I AM...
and the Spanish negative, I no have, I no want, I no am.
No tengo hotel. No quiero taxi. No soy professor.
You can go through life with just 3 verbs, learning NEW nouns, and using 2000 cognates = english words.
You can use other verbs without congugation... Example: instead of "Can I use my credit card?" Just change it to, " I want to use my credit card!" with a polite intonation of a question. "Quiero USAR mi ...credito cardo? (tarjeta de credito, but they will understand you).
Don't spend 2 weeks reading a book! Spend 2 weeks talking to your friends that know a little Spanish from school years ago.
Good luck.

I LOVE Pimsleur's and you can learn a lot in 2 months, it's 1 hour sessions, so in 2 months you can basically finish Pimsleur's Spanish 1 & 2, there are only 2 more after that one.
