Usually it will begin to grow mold once it truly expires. Depending on the conditions in which it is kept the time may vary. Sealed jam may last quite a long time, while opened jam which is constantly in and out of the refridgerator may develop mold much sooner.

Yes strawberries would be fine if she has been having Strawberry preserve. I have a strawberry allergy and personally waited until 12 months (as per doctors advice) before giving my son any berries or Berry Jam. I have reacted to Strawberry Jam so I would say if she's fine with the Preserves she should be fine with the Fresh Strawberries.

The expiration date is the guarantee the jam will have the full flavor and texture. When jam gets old it begins to crystallized and the flavor is flat.

As long as it's refridgerated, keep it unitil it molds or smells sour.

I would say if it's expired, throw it out.
