Dark chocolate is at least 15-35% pure chocolate solids with added cocoa butter and sugar. It has a less sweet, more chocolately taste. It has more antioxidants and less fat than milk chocolate.

Milk chocolate is 10% pure chocolate solids with added cocoa butter, sugar, and milk solids. It has a sweeter, less chocolately taste. It contains fewer antioxidants than dark chocolate, and has more fat.

White chocolate contains no chocolate. It is comprised of cocoa butter, sugar, and milk solids. It has much more fat than the other kinds.

The catagories have to do with how much cocoa butter and milk solids vs. actual cocoa. The lighter the chocolate, the less cocoa. White chocolate has no cocoa, just the cocoa butter and milk solids and sugar too of course.

Dark or bittersweet chocolate has a higher %age of cocoa solids, up to 75%.
Semi-sweet chocolate has a higher sugar content and as little as 50% cocoa solids.
Milk chocolate has milk solids added and a higher sugar content. White chocolate has 0% cocoa solids and is not really chocolate. it's mainly cocoa butter and sugar.

Not sure, maybe something about when making dark chocolate you use either no or less milk, but I found it interesting seeing how Hershey gets its unique flavor.

They use sour milk to get their tasty flavor.
