Porcupine Balls

My grandmother always made these when siad we were "REALLY" hungry. Giant meaty, tomatoe meat balls.

Change to: servings US Metric
1 lb lean ground beef
1 onion
2 cups five- Minute Rice (or any other cooked and cooled rice)
1 large egg
2 (10 ounce) cans tomato soup
10 ounces water
Thaw beef, chopp onions into small peices.(Some people prefer minced).
In a bowl combine beef, onion and egg.
Mix well with hands.
Roll into "meat balls". Any size will do. My husband loves them the size of a tenniss ball.
Put rice into large bowl.
Roll "meatballs in rice so they are coated.(making them little porcupines).
Place in bakeware dish.
Pour both cans of tomatoe soup into another bowl and mix with one can of water.
Pour over porcupine balls.
Turn porcupine balls over and spoon some of the soup over them.
Cover and bake at 350 C for 30 minutes, uncover and bake untill meat is well done. Aprox. 30min.

PORCUPINE BALLS 1 c. rice, uncooked 1 lb. hamburger meat 1/2 c. bell pepper, if desired 1/2 c. chopped onion Salt and pepper to taste Combine all ingredients and mix well in a large mixing bowl. Make into medium size balls and place in baking dish. GRAVY: 1 can tomato soup 1 can water About 4 tbsp. Worcestershire sauce Mix well and pour over porcupine balls. Make sure all are covered. Cover with foil and bake at 350 degrees until rice is cooked and pops out of balls. Very good served over mashed potatoes.

BEEF AND RICE PORCUPINE BALLS
1/4 c. uncooked white rice
1 lb. ground meat
1 tsp. salt
Dash pepper
1 tsp. butter
1 tbsp. chopped onion
2 tbsp. chopped green pepper
2 cans tomato sauce, 8 oz. each
1 tsp. Worcestershire sauce
1 c. water
Rinse rice. Mix together rice, meat, salt and pepper. Mix well and form 1 1/2 inch balls. Melt butter and saute onion and pepper about 5 minutes over low heat. Pour in tomato sauce and water. Heat to boiling. Add porcupine balls and cover. Reheat to boiling then lower heat and simmer 40 to 50 minutes. To thicken, make a paste of flour and water and mix in and stir until thick.

Mmm...I remember those!
Its 2 cups of cooked rice,with a pound of ground beef, with an egg. Add chopped onion and green pepper to taste. Ball them up, put them in a greased pan and add a large can of tomato soup. Cook them for about 30 minutes, or until cooked through.
