Depends on what joint of beef you have got, we normally have brisket which seems alot cheaper than other joints of beef, the way we usually cook it is to put it in a saucepan of water and simmer it for 45 minutes roughly, keep on adding water to make sure the joint is covered, then lift out the joint and place it in a deep roasting dish , add 1/2 pint of the water from the saucepan and roast for half of the time that it says on the label as you have already been simmering it for a while, make sure you cover the joint in the tray with tin foil so that the water roasts it and steams it at the same time making it very tender juicy meat, when it is all cooked , use the juices in the tray and the water that you have used in the saucepan to make your gravy, the best gravy you will ever get, hope this helps.

Cover joint in English Mustard, peel and roughly chop 1 carrot and 1 onion. Put in roasting pan with meat. Cover with tin foil and cook. 20 mins a pound and 20 mins over.
Use the juice for the gravy. It is To die for. The meat also tastes really nice.

In an oven. I could even be pedantic and say, if its already roast it doesnt need to be cooked.
Seriously though 20 minutes a pound and 20 minutes on top on gas mark 7.
