Light refers to being packed in water instead of oil. white refers to the white meat of the fish. Example:
Light white tuna is white meat of the Tuna packed in water
Light Tuna is dark meat of the Tuna packed in water.
White tuna is White meat of the tuna packed in oil.

Chunk light they can add the dark pieces of the fish and use different types of tuna fish. Chuck white is usually solid albacore, which is the best!
