Shrimp Fried Rice - will feed 2 nicely or 4 for appetizer
You can cut the shrimp into small pieces or leave them as is.
Cook a couple of cups of rice (depends on # of guests)
In large frying pan or wok:
melt some butter....if on diet use cooking spray instead
brown some chopped onions (add other veggies if you like)
add rice (stir it occasionally for about 5 minutes on med heat)
add 1 ts of sugar and 3/4 cup soy sauce together add to pan
be sure and stir..it will stick...
sometimes I add a scrambled egg (you can do this prior to starting)
sometimes I add peas & carrots to make it a little more corolful
put lid/cover on and turn down to low
let it cook another 5 minutes before removing from stove
Your done!!
I usually serve mine with some store bought frozen egg rolls as a side. It's a simple, cheap inexpensive meal.

Italian Pasta Salad
This is an extremely easy salad recipe, great for in-a-rush weekday dinners. It is also really good! I like to use tri-colour rotini for this, because it adds colour, but you can use any kind of pasta. And add any kind of vegetables too instead of the suggestions here - whatever you have in the fridge. If you have leftover chicken or ham, chop and add that too, then you've got a whole meal.
Ingredients:
3 cups rotini pasta
1 cup grated Parmesan cheese
1 cup Italian salad dressing
1/2 red pepper, chopped
1/2 red onion, sliced
2 cups broccoli, cut into small flowerets
1/2 cup black olives, sliced
Directions:
Cook the pasta and drain.
Combine the pasta with all the remaining ingredients. Mix together. Chill.

Fry some rice and add the shrimp and some soy sauce, ginger and garlic.
Or
Melt butter in a saucepan, add parsley,garlic, salt & pepper, and some white cooking wine, white wine, or beer to it. Bring to a boil.
Dissolve a tsp. of cornstarch w/tsp.water in a cup. Add to mixture to thicken then add the shrimp to the hot mixture.
Go easy on the wine. A little goes a long way.
Serve alone or over steamed rice.

Here is a great shrimp salad recipe..
Old Bay® Shrimp Salad
1 lb shrimp, cooked
1/2 cup mayonnaise
1/3 cup chopped celery
2 tsp Old Bay Seasoning
2 tsp lemon juice
1/4 tsp Worcestershire sauce
1 Peel and devein shrimp; cut in half and place in bowl. Set aside.
2 Combine dressing ingredients and mix well. Pour dressing over shrimp and toss gently. Cover and refrigerate at least 1 hour.
3 Toss salad just before serving and serve on bed of lettuce or sandwich roll.
Servings: 4
Preparation time: 10 minutes
Ready in: 1 hour and 10 minutes

INGREDIENTS
1/4 cup butter
1 tablespoon chopped green onion
1 pound fresh shrimp, peeled and deveined
2 tablespoons all-purpose flour

2 cups milk
1 tablespoon celery, chopped
1 large tomato, sliced
8 slices provolone cheese
4 English muffins, split and toasted
DIRECTIONS
In a medium saucepan, melt butter and saute onions and shrimp over medium heat until shrimp are pink.
Stir in flour and Old Bay seasoning to make a roux. Slowly pour in milk, stirring constantly. Allow to thicken. Stir in celery and cook until celery is soft.
Preheat oven on broiler setting.
Spoon mixture over toasted English muffins, top each with a slice of tomato and provolone cheese. Place under a preheated broiler for 30 seconds to 1 minute or until cheese is melted

Chop the shrimp into small pieces. In an 8x8 inch baking dish, combine shrimp, yellow onion, bell pepper, garlic, mayonnaise, vegetable oil, Old Bay ™ seasoning, black pepper, salt, and 3/4 cup of cheese. Mix well, use reserved 1/4 cup cheese to cover the top in an even layer.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.

shrimp cocktail! arrange then nicely on some glass.. mix mayo with ketchup and chilli sauce to get cocktail sc.. serve with lemon wedges.. yummy..
