try some of the tour operators for ideas like Thomson ski. If you book your flights, hotel yourself you will normallly be able to hire skis and ski school lesson when you get there at the ski resort operators ticket office. Or alternatively you can go through a travel company which will book them for you.

Champery in Switzerland. Nice village, three ski schools (Ecole Suisse de Ski, Freeride/Progressive and Red Carpet).
Friendly instructors, good value ski hire shops, and nice places to eat out.
Champery is 90 mins by car from Geneva airport.
See link below for more info.

The East will be suffering from snow envy all winter long. Conditions out west are awesome, but most resorts in Colorado and Utah are EX$PEN$IVE!
Try New Mexico. Awesome scenery, low cost and low key. Not a lot of people, affordable, etc. They'll have instructors available.
