I love to bake and I want recipes that make CHEWY cookies, it is nothing I have worst is to have a hard cookie. Is there a special ingredient I can add to the mix other than molasses that will help them stay chewy for 2-3 days?

Heres an awesome european cake recipe!!!!!!!!

Preheat oven to 350

Make a pie crust:
100g sugar
200g butter
300g flour
1 egg

Make the filling:
600g sour cream
1 packet ( 40g) Cooking Vanilla pudding--> make pudding with 1/2 milk, some sugar
add these together with another packet of vanilla pudding
and a bit of sugar

on top of the filling place cherries or madarin oranges

Bake 30-40 min, and refrigerate about 2 hours before eating

Tipps: You can take any other flavr of pudding, or even make little cake in cupcake molds (perfect for parties)!

Peanut butter can help. made up my own recipe for a PB choc. chip oatmeal bar, its always works well, almost fudgy. An important trick for chewy-ness is to have the right amount of sugar, often a little more than called for in a basic cookie recipe. I also kinda go by the feel of the dough, it should be quite soft but not very sticky.
Here is my recipe
2 sticks of butter softened
3/4 cup sugar
3/4 cup brown sugar
1/3 cup peanut butter (approx., I just use a big glob on a spoon)
Cream together thoroughly
beat in
2 eggs
1 tsp vanilla
1 tsp baking soda
mix well, add
1 1/2 cups flour
1 cup oatmeal
add more flour if needed to get texture described above
add choc. chips ( I use a whole bag, makes it VERY chocolatey)
press into a 9"x13" baking pan and bake at 350 for about 15 minutes. bars are done when they have puffed up and edges are very lightly browned, they should fall in when you take them out of the oven. I even slam the pan on the counter to make them fall in, this makes them dense, moist and yay! chewy! let them cool a little before trying to cut or you will have a big mess. hope you enjoy :)

Here is the perfect recipe for chewy cookies...

CHEWY MOLASSES COOKIES

INGREDIENTS:
2 cups all-purpose flour, measure after sifting
2 teaspoons baking soda
1/4 teaspoon salt
3/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon pure vanilla extract
1 1/4 cups butter, at room temperature, (2 1/2 sticks)
1 cup dark brown sugar, firmly packed
1 large egg
1/4 cup molasses
PREPARATION:
Line two baking sheets with parchment paper or Silpat sheets.
Combine the first 6 ingredients, mixing to thorouthly blend. Add the remaining ingredients; beat with electric mixer for 2 minutes, scraping down the sides of the bowl a few times.

I just went on the net & found lots of recipes for chewy bars & cookies. Here are a couple of them but if you want more~just type in chewy cookies &/or bars in the search bar.

Chewy Chocolte Cookies:
1 1/4 C butter or margarine, softened
2 C granulated sugar
2 Lg eggs
2 tsp vanilla extract
2 C all-purpose flour
3/4 C unsweetened baking cocoa
1 tsp baking soda
1/2 tsp salt2 C semi-sweet chocolate chips

Preheat oven to 350*F (175C). In a lg mixing bowl, cream butter & sugar until light & fluffy. Add eggs & vanilla, beat well. Sift together remaining dry ingredients, gradually blend into creamed mixture. Stir in chocolte chips. Drop by spoonfuls onto ungreased cookie sheets. Bake 8 to 9 minutes, DO NOT ovrebake. Cookies will be soft. Cool slightly on cookie sheet, transfer from cookie sheet onto a wire rack to cool completely.

Chewy Cereal Bars:
1 1/2 C corn syrup
1 C brown sugar
1/2 C sugar
1 1/2 C peanut butter
6 C crisp cereal (ex. Special K)

In a lg microwaveable bowl; combine corn syrup & sugars, mix well. Microwave on high 4 to 7 minutes until bubbling, stir twice while cooking. Remove fom microwave & add peanut butter. stir until PB melts & mixture is smooth. Add cereal, stir gently until cereal is thoroughly coated. Spread mixture onto greased 13x9" pan. Using back of spoon, press evenly into pan. Let cool then cut into bars.

Chewy Flapjacks

150g porridge oats
150g margarine
8 tablespoons Agave nectar / agave syrup

Melt the margarine in a saucepan and stir in the oats. Add the syrup and combine thoroughly. Press into a greased baking tin and bake in a 180 degree oven for 10 minutes. As soon as you get it out of the oven cut into to it, to form separate pieces but leave in the tin. After 30 minutes move onto a cooling rack. Eat when cool.

Old Fashioned Chocolate Spice Cake
1 cup shortening
2 cups granulated sugar
4 eggs, separated
3 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cloves
1 teaspoon ground allspice
1 1/2 teaspoons ground cinnamon
2 teaspoons grated orange peel
1 cup milk
1/4 cup orange juice
3 squares (3 ounces) unsweetened chocolate, melted and cooled
Preheat oven to 350°. Butter and flour a 13x9x2-inch baking pan.
Cream shortening with sugar until light. Add egg yolks and beat until fluffy. Sift together the sifted cake flour, 2 teaspoons baking powder, salt, and spices. Add the orange peel to dry mixture. Combine milk and orange juice and add to creamed mixture alternately with the dry ingredients. Stir in the melted chocolate until well blended. Beat egg whites until stiff peaks form; fold into the batter. Pour into a 13x9x2-inch baking pan and bake at 350° for 50 minutes.

Frost with a buttercream or cream cheese frosting, top a dessert sauce, or dust with confectioners' sugar before serving.

Peanut Butter and Milk Chocolate Chip Brownie Bars (Reese's®)
Traditional brownies take on a new dimension when topped with a light and creamy layer of Reese's Peanut Butter & Milk Chocolate Chip-infused peanut butter mixture. Top with nuts or melted baking chips for even more flavor!

6 Tbs butter or margarine, melted
1 1/4 cups sugar
2 tsp vanilla extract, divided
3 eggs, divided
1 cup all-purpose flour
2 Tbs all-purpose flour
1/3 cup HERSHEY®'S Cocoa Powder
1/2 tsp baking powder
1/2 tsp salt
1 (14 ounce) can sweetened condensed milk (not evaporated milk)
1/2 cup REESE'S® Creamy Peanut Butter
1 (11 ounce) package REESE'S® Peanut Butter and Milk Chocolate Chips, divided
3/4 tsp shortening

1 Heat oven to 350 degrees F. Grease 13x9x2-inch baking pan.
2 Stir together butter, sugar and 1 teaspoon vanilla in large bowl. Add 2 eggs; stir until blended. Stir together flour, cocoa, baking powder and salt. Add to egg mixture, stirring until blended. Spread in prepared pan. Bake 20 minutes.
3 Meanwhile, stir together sweetened condensed milk, peanut butter, remaining egg and remaining 1 teaspoon vanilla extract. Pour evenly over hot brownie. Set aside 2 tablespoons chips; sprinkle remaining chips over peanut butter mixture. Return to oven; continue baking 20 to 25 minutes or until peanut butter layer is set and edges begin to brown. Cool completely in pan on wire rack.
4 Place reserved chips and shortening in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, until chips are melted and mixture is smooth when stirred. Drizzle over top of bars. When drizzle is firm, cut into bars. Store loosely covered at room temperature.
Servings: 24
Yield: 24 to 36 bars.

with any cookie recipe you can take the cookie out a few minutes before they are "done" and let them sit at room temperature. they will continue to cook a bit but will maintain their softness. make sure you dont take them out too early, most cookies need at least 8 minutes in the oven or more. good luck!
