Peel 8 to 10 carrots 1 parsnip chop 1 onion sweat the onion in a little olive oil for about 5mins add the chopped carrots and parsnip add your veg stock and 2 chopped potatoes cook for about 60 mins then whizz to a smooth texture then add a tin of cannellini beans .serve with hot roles.

One of my favorite soups is a hot and sour soup from epicurious.com. Only I don't put in the dried mushrooms, and I use a package of ramen for the noodles (without the seasoning packet). It calls for chicken broth, but I gave this recipe to a vegetarian friend once and she loves it just by using veggie stock instead.
It also has tofu in it, if that matters. I've been making this soup for years.

I can vouch for all of these but the Scrap Soup. And you can always use vegatable stock in place of chicken or beef stock; I do it all the time.

Italian Vegetable Soup:
1 pound ground beef
1 cup onion, chopped
1 cup chopped celery
1 cup chopped carrots
2 cloves garlic, minced
1 can (16 ounces) tomatoes, chopped, with juice
1 can (15 ounces) tomato sauce
2 cans (19 ounces each) white or kidney beans
2 cups water
5 teaspoons beef broth
1 tablespoon parsley
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
2 cups chopped cabbage
1 can (15.25 ounces) corn
1 can (14.5-15.25 ounces) green beans or peas
1 cup macaroni or pasta
Brown beef; drain, and rinse. Add onion, celery, carrots, garlic,
chopped tomatoes, tomato sauce, beans, water, broth, parsley,
oregano, and basil. Bring to a boil. Lower heat and simmer 20
minutes. Add cabbage, corn, green beans or peas, and pasta.
Bring to a boil, then simmer until vegetables are tender. Add
more water if needed.
