I have two for you. One is basic and simple, the other is a bit more complicated, but very very very good!
INGREDIENTS
1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/4 cup shortening, melted
DIRECTIONS
In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.
Here is the second, more ingredients, more steps, more fluffy and flavorful though:
INGREDIENTS
1 3/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/4 cup vegetable oil
1/2 teaspoon vanilla extract
DIRECTIONS
combine the dry ingredients in a bowl. In another bowl, beat the eggs, buttermilk, oil and vanilla. Stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown. Serve with warm fruit topping if desired (such as strawberries).
If you are in a hurry, Aunt Jemima makes good pancake mix, too!

It's always easiest to use a pre-mix. Bisquick is about the best. Always remember that the thicker the batter is, the thicker the pancake will turn out. Easy way to do it is follow the recipe on the box and make one. If it's too thin for your taste, just add more pre-mix to the batch.

If your pancakes are too thin, then you are adding a little too much milk to the recipe.
To keep it simple use the Bisquick product and make the pancakes using the recipe on the box label. Enjoy!

The secret is good baking powder and baking soda, and buttermilk. And if you don't have buttermilk use about a tablespoon of lemonjuice in a cup of milk (let it sit until it curdles). And always use jumbo or large eggs.
Also, I always add about a 1/2 teaspoon of vanilla...
Lastly, if they are too thin, add more flour.
Most of the time, it's because the batter is too thin. So, don't pour all the liquid in at the same time, do it in parts.
So, here's the recipe:
1 large egg
1 cup of flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoone sugar
1 cup buttermilk
1 tablespoons vegetable oil
1/4 teaspoon vanilla

Just buy the ready to make pancake mix. That's what I buy, they still taste like real pancakes. I don't see the difference.

try making these delicious crepes (german pancakes)
Beat together:
1/2 liter of milk
6 eggs
250 g flour
2 tsp sugar
Bake in a greased pan at medium heat, until sligthly solid with a few brown spots on them. Do not make them too thin!

When I make pancakes or waffles, I use BISQUICK. Its a baking mix. Its very good. It also has other receipes on the box too.
