You haven't mentioned a particular neighborhood, so I assume that's open. These restaurants have excellent food and no dress code and no snooty waiters.
Greenwich Village:
AOC Bedford (at Downing Street) excellent food and service

Great Cuban food at Little Havana on Cornelia and Bleecker
Charming wait staff

Gene's Italian on West 11th off Sixth Avenue - very good, especially the seafoods and desserts
East Village:
Casimir on Avenue B and 6th Street - very good French bistro
I Coppi East 9th Street and Avenue A - great Italian food - great service (not a "red sauce" restaurant)
Flatiron District: A Voce, Madison and 26th - Wonderful Italian food!
Upper East Side:
David Burke & Donatella, 61st and Lex - I had a dream about the cheesecake lollipop tree.
Upper West Side:
Pampas - Argentine steakhouse - best sweetbreads, good steaks, excellent fries and the best looking waiters - very easy going.

go to COFFEE SHOP in union square. it's hip, loud, fun and singles-friendly. it is by NO means a diner, by the way! so very fun with single seating at the bar, as well as table service. new yorkers are the friendliest in the country, so you are sure to make new friends! enjoy!
