I just made this today...its yummy, despite its name. :) Its called a Dump Cake. This is just because it requires no mixing...just layering/"dumping it in".

1 regular size cherry pie filling
1 regular size can of crushed pineapple
1 box yellow cake mix
2 sticks of butter melted
1 cup coconut
1 cup chopped nuts of choice

Layer the ingredients as evenly as possible in a 9 by 13 pan in the order of the list above...

350 degree oven for exactly one hour. Its a very oey-gooey delicious cake.

Baked apples. Easy, tasty and even healthy.

Baked Apples
serves 4

4 baking apples
4 Tablespoons brown sugar (dark or light okay)
1/2 Cup raisins*
2 teaspoons butter, margarine, or whatever you use to substitute
1 teaspoon cinnamon
pinch nutmeg
pinch allspice
pinch ginger
(or substitute 2 teaspoons apple pie or pumpkin pie spice mix for individual spices)
4 Tablespoons apple cider, apple juice or water

* or chopped walnuts, chopped dates, chopped dried apricots, or any other dried fruit/nut you like, or mix fruits and nuts as you like. Personally, I prefer a raisin/apricot mix best. My housemate prefers just chopped walnuts.

Preheat oven to 350F. Core apples and pare about 1/3 to 1/2 way down from stem end to blossom end. Place in a small, lightly oiled baking dish. (This makes easier clean-up, but is not necessary if you're watching your fat intake.) Spoon 1/2 Tablespoon brown sugar into the core-hole of each apple. Then stuff each apple with up to 2 Tablespoons chopped, dried fruit. (Don't worry if some spills out the top.) Top each apple (the top of the apple and the top of the dried fruit) with another 1/2 Tablespoon of brown sugar. On top of that add 1/4 of the butter to the top of each apple. Sprinkle over each apple 1/4 teaspoon cinnamon, and a pinch each nutmeg, allspice, and ginger, or 1/2 teaspoon apple pie spice mix or pumpkin pie spice mix. Spoon the apple juice or water over and into the core hole of each apple.

Cover with lid or aluminum foil and bake for about 20 minutes, then baste each apple with the pan juices. Repeat every 10 minutes until the apples are fork soft. The time will depend upon the size and variety of the apples, of course. If you have small apples, baste after 15 minutes, and every 6-7 minutes after that.

Serve apples while warm on individual, warmed desert plates or in warmed bowls. Top with any pan juices, and/or unsweetened or sweetened whipped cream, light cream, half-and-half, or vanilla ice cream.

OR

To microwave, reduce juice/water to 2 Tablespoons, and change the second paragraph to:

Cover with lid or plastic wrap and microwave for about 3 to 3-1/2 minutes. Remove cover, give each apple a 180 degree (1/2 circle) turn minutes, then baste each apple with the pan juices. Recover. Bake again until the apples are fork soft. The time will depend upon the size and variety of the apples and the wattage of the microwave, of course.

Notes:

For either baked or microwaved apples, add extra cider/juice/water if you don’t have enough liquid with which to baste.

Because of differences in apple sizes and varieties, baking time can be as little as 25 minutes or as much as 45. If you get giant-sized apples, it may be even longer. Microwaving is harder to figure a time. I just keep checking, shortening the time between checks as the apples get closer to being done.
