Here's one for a pecan cake:

Here's one for pumpkin cake:

Here's one for a more traditional bread:

And, finally, this article gives instructions on using a coffee can instead of a loaf pan for baking cakes and breads in general:

This sounds like a really interesting idea! I may have to give this a shot myself. Never heard of it until your question.
Happy baking!

Yes. First, you need one of those cookers, the kind that you put a container on it and it cooks the contents inside. Once you have the cooker, take a large coffe can, and fill one-fourths of it with coffee powder. Then have some vanilla cake batter and mix that up. Once the vanilla cake batter is finished, pour the vanilla cake batter into the coffee can. Mix it up until it comes to a light brown and smell it, it should smell like a coffee cake batter. Then set the cooker for about 350 degrees F. And for about thirty minutes. Don't worry about greasing it because a knife going all the way around should get it out. Once it is done, take it out and take a knife and cut it on the trim all the way around. Don't take it out yet, though. Then, you take something and poke a small (not too small) hole in the top. If you want to poke a very small hole, I suggest poking alot of them. Then wait for ten minutes for it to cool, and for the inside to cool. Then, turn the can upside down and you have a coffe-can shaped coffee cake! Or you could keep it in the can. Enjoy!

I've heard if it and can't seem to find a recipe. I would say however, make your favorite coffee cake and use the coffee can like a baking tin I would use a 1lb can, 3lb would take forever to bake and probably burn the outside and be raw on the inside.
Good luck.
