Should be fine. Cook it for a little longer than usual. You'll know for sure if you smell the cooked mince before adding anything to it. If it's off, it'll smell sour. If that's the case, don't touch it with a bargepole! If it still smells ok when cooked, it'll be perfectly safe.

I bought fresh mince, brought it home and didn't use it that day, the following day I took it out the fridge - it was pale looking and had an odd smell (I don't normally have a habit of sniffing mince) I threw it out. I always say 'If in doubt chuck it out' best to be safe than sorry - have mac and cheese for tea instead!

It should be fine if it smells ok. The paleness is freezer burn caused by the meat drying out from being frozen.

It is safe. It sounds as though it is just freezer burned in a few spots (dried out) Remove the damaged areas. It is safe to cook and eat.

It sounds like the mince has freezer burn, i would bin it because it has lost lots of its nutrients.

My favourite sayin about everything doubtful is, 'If in doubt - leave it out'. In other words if you have any doubts do yourself and family a favour and dump it. May be the loss of a bit of cash but so what !

it is fine, beef especially loses colour after being frozen or even when fresh, it oxidises quite quickly but it will be more tender than if it were bright red.
