Too much yeast will cause an overbloom of CO2 so the bread will be airy but not have the structure to support that air, especially if it is a no-knead bread. It is likely to rise, then fall flat. If it's not too late, add some salt, like a tsp or so. Salt kinda reigns in yeast.
