It depends if the sponge cake has already been baked. If it has you will probably only be able to change the colour of the topping with food colouring (butter icing or other icing) and perhaps give the cake a paper skirt.
Decorate with coloured edible rice paper around the edge maybe.
Decorate with hundreds and thousands, smarties, chocolate buttons etc.
The choice is yours or the person you are baking for!
As has already been said add a drop or two of food colouring to the cake mixture before baking is the best solution to change the actual sponge colour.

Wilton makes gel colorings that are tasteless and give you brighter, richer colors. Since they are gel, they don't add moisture, so they won't make your batter or frosting any thinner, which could be a problem if you use too much liquid coloring. They are also easier to combine to make other colors than liquids are as they come in more colors to begin with. You'll find them in the craft/hobby area of many stores and close to the frostings at your local grocery store. If you've already baked the cake and would like to add color and taste, but not too many calories--try using Jello or tinted Cool-Whip instead of frosting. To use Jello, simply make up the Jello with the package directions, then spoon it over your cake when it's a little more than half way set--be sure to put the cake in a larger pan with a slight lip (to keep it from running all over the place), or you can simply leave it in the pan you baked it in (or what it came in), poke a few holes with the handle of a wooden spoon and pour the jello over it. It will go into the holes and will coat the top as well. Hope this gives you some ideas!

Before baking add a few drops of food colouring just add one or two at a time and mix well before adding too many or you will end up having a revolting coloured cake.
Various colourings can be bought at you supermarket, definitely Tesco and Somerfield stores. Hope this helps

A few drops of cochineal into the sponge mix will make it pink and not affect the taste of the sponge.
