Pork Chile Verde
This is a low fat version of green chile that my mom used to make!

Servings: 4 very large servings

• 2 lbs. lean pork, cubed in small pieces
• 1/2 cup water
• 2 cloves garlic, chopped
• 1 onion, chopped
• 1 cup diced tomatillos
• 1 tsp. ground coriander
• 4 oz. can chopped mild green chilies
• 2 Tbsp. chopped fresh cilantro
• 1-2 fresh jalapeno peppers, finely diced, to taste
• Dash salt and pepper


In large saucepan, combine pork, water and garlic. Cook until all water is absorbed; continue cooking and let pork brown for a few minutes. Add onion and sauté until translucent. Add tomatillos and canned green chilies. Add chopped fresh jalapenos, a little at a time, to taste.

Cover and simmer for 30-40 minutes or until pork is tender. Just before serving, add chopped cilantro, salt and pepper to taste. Serve with warm flour tortillas, fat free sour cream and poblano pico de gallo.

Chili Verde Burritos

Ingredients :

1lbpork tenderloin cut into 1" pieces
1lbfresh or canned tomatillos drained
2medcarrots coarsely chopped
1lrgonion chopped
1lrgpotato peeled, and
cut into 1" pieces
4xgarlic cloves minced
1jargreen chili salsa - (14 oz)
1candiced green chili peppers - (7 oz) drained
1/2tspsalt
1/4tspground red pepper
12whl-wheat tortillas - (8" dia) warmed
2medtomatoes chopped
1cupsnipped fresh chives
1/2cupsnipped fresh cilantro - (loosely packed)

Method :

* Spray a Dutch oven with no-stick spray. Heat over medium-high heat. Add the pork. Cook and stir until the pork is no longer pink. Add the tomatillos, carrots, onions, potatoes and garlic. Cook and stir about 7 minutes or until tender. Add the salsa, chili peppers, salt and red pepper. Bring to a boil, then reduce the heat. Cover and simmer for 30 minutes.
* To serve, let guests assemble their own burritos. To assemble, spoon about 1/2 cup of the pork mixture onto each tortilla just below its center. Top with a small amount of tomatoes, chives and cilantro. Fold in the sides of the tortillas. Then roll up from the bottom to enclose the filling.
* This recipe yields 12 burritos for 6 servings.
* Comments: These burritos are so full of flavor that the taste testers didn't even miss the sour cream.

A similar recipe of my own would be to use belly pork cut into smalll pieces , and brown in hot oil. Add a sliced onion and a clove of garlic and soften, then add some dried chillies and half a can of chopped tomatoes ( per person).Add a clove if you like the taste.
Simmer and stir and cook for about 30 minutes, Serve with boiled rice.

Spicy Pork & Peppers
2 lbs lean boneless pork, cut into 1 inch cubes
2 tablespoons oil
1 large onion, sliced thinly and separated into rings
4 cloves garlic, minced
4 anaheim chilies or 2 (4 ounce) cans diced chili peppers, remove seeds & membrane (or any other hot pepper you LOVE)
6 tomatillos, peeled & chopped
1 cup chicken broth
1 large tomato, chopped
1 teaspoon dried oregano
1 teaspoon cumin
2 teaspoons fresh lime juice
2 tablespoons slivered roasted almonds
hot cooked rice

Brown the pork in the oil and set aside.
Add the onion, garlic& cumin.
Cook until the onions are transparent.
Return the meat to the pan.
Add peppers.
Stir in the tomatillos,broth, peppers, tomatoe, cumin& oregano.
Bring to a boil, simmer covered about 1 1/2 hours.
Uncover and simmer about a 1/2 hour more or until the sauce has decreased and thickened.
Stir in the lime juice.
Serve over cooked rice, sprinkle with the toasted almonds.

Pork & Pinto Bean Chili

11/2 pounds pork stew meat, such as shoulder, cut into 1/2-inch cubes
1/2 cup all-purpose flour
2 tbsp vegetable oil
1 large onion, finely chopped
1 green bell pepper, seeded and coarsely chopped
1 jalapeno chile, seeded and finely chopped
3 cloves garlic, minced
1 can (28 ounces) plum tomatoes with juice, coarsely chopped
1 cup reduced-sodium, fat-free chicken broth
3 tbsp chili powder
1/4 tsp salt
2 cans (15 ounces each) pinto beans, drained and rinsed

1. Coat pork with flour. Shake off excess flour.
2. In large nonstick saucepan over medium-high heat, heat oil. Working ib batches, add pork and brown on all sides. about 5 minutes per batch. Transfer pork to plate as it browns.
3. Lower heat to medium. Add onion, bell pepper, jalapeno, and garlic. Cook until onion is softened, about 5 minutes. Return pork to pan. Add tomatoes, broth, chili powder, and salt. Simmer 1 hour, stirring occasionally. Stir in beans. Simmer until meat is tender and sauce is thickened, about 40 minutes. If sauce becomes too thick, thin with a little water.
