I was actually discussing this with a friend earleir today...

She mentioned that there are laws (UK-based) which currently mean you have to get married under cover - inside, or under a marquee, I guess, and that you can't marry after a certain time??!

Under the Marriage Act, 1994, which came into effect in 1995, a marriage may take place in a place of religious worship, register office or public premises officially registered for marriages by the Registrar General for England and Wales. Civil marriages may now therefore occur in "seemly and dignified venues," such as stately homes, civic buildings or hotels (but not open-air venues) which have been officially registered for the purpose. Lists of such premises are available from the register office in the area of interest.

Unfortunately I don't think you can be married anywhere outdoors in England and Wales. It has to be at an appointed place with a licence to perform marriages. This is because of the messy way marriages used to be performed up till Hardwicke's Marriage Act in the 18th century, when it was sometimes uncertain whether parties had contracted a valid marriage or not. If you want to be married outside, this can be done abroad. For example in New Zealand you can get married beside a waterfall.

In England you can only get married in a place of worship or a venue licensed for civil wedding ceremonies. You can't get married in the open air - BUT... you can in Scotland, my brother got married on a beach!
