Our new favorite is White Chocolate Cranberry. People went nuts for them over the holidays, I made 4 dozen (of the 12 dozen total):

White Chocolate and Cranberry Cookies
(I used vanilla instead of the brandy)
INGREDIENTS
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tablespoon brandy
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup white chocolate chips
1 cup dried cranberries
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

Hope you love them!

1-1/2 pounds mixed candied fruits
1 pound raisins
3/4 pound chopped pecans
Cream together butter, sugar, and jelly. Beat in eggs. Dissolve baking soda in milk and add to creamed mixture. Sift together flour and spices and add half of this to the creamed mixture. Combine fruits and nuts and dredge with remaining flour mixture. Stir this into batter.

Drop from teaspoon onto greased cookie sheet and bake at 300 degrees for 15 to 20 minutes, depending on size of cookies. These cookies should be made well in advance of the holidays as they ripen like fruitcake.

I like the old time recipes that have few ingredients. Like cookies grandma used to make, some as early 1900's.

But I like the No Bake cookies too, but how many people keep cocoa and oatmeal in their pantry?
