This may sound extreme, but if you do a lot of crockpot cooking and have long work days, believe me, it is the only real answer. Go buy one of the crockpots that will cook for a prescribed amount of time (4,6,8 or 10 hours) on either high or low and then will automatically turn itself onto "warm" for two additional hours to just maintain the heat of your dish without continuing to cook it. This is the only type of crockpot you can really rely on.

Use the low setting and don't open the lid. I'm not an expert at crock pot cooking, but I've followed these couple of simple rules and have made some awesome, fall-apart-in-your-mouth meals.

Make sure there is enough water or broth in the crock ,and keep it on low setting,most crocks only cook for 8 hours,even on low most crocks heat up pretty good .

Use a cut that only improves the longer you cook it and use as big a piece as you can. Round, rump, shoulder, brisket. Put in a little liquid, beef bullion, and tomato paste as well as your other ingredients and herbs and spices.

keep it on the low temp. setting, if it calls for 10 hours of cooking as long as your back before then it should be fine
