IHOP restaurants brew coffee from a blend of arabica beans, delivered to them in premeasured packages to ensure consistency. Package sizes are varied to best accommodate the shifts in business throughout a day.
Borders Cafes use/used SARA LEE INSTITUTIONAL COFFEE. It's the same sort of thing that you get at IHOP or Denny's. It's the Budweiser of coffees. SBC serves SBC coffee and SBC chai. It's not Starbucks.

I asked in Ryans and Shoneys and they said Sanka is what is used most often in resturants
