Head cheese is a dish made of portions of the head, or head and feet, of swine, cut up fine, seasoned, and pressed into a cheeselike mass. Basically it's bits and pieces of an animal pressed together with some cheese. Sometimes they even add unflavored gelatin to hold the whole glob together.
It's popular in France.

In the southern US, it was sometimes called hogshead cheese or just head cheese.
I think the modern equivalent might be Spam or potted meat.

Really disgusting parts of the animals' bodies (cows, pigs, sheep) such as the head, feet, snouts, etc.
