Slice a checkerboard pattern into the ham. Stick a whole clove into each crosspoint (if you don't like cloves skip this step). Place ham in roaster.

In a saucepan, add juice (not syrup) from one can of pineapple slices, a cup of brown sugar, 2oz of maraschino cherry juice, 6 whole cloves (or not), 4oz honey & 4oz dijon mustard (preferably with lots of mustard seed. Heat until thoroughly blended. It should be a thick syrupy consistency.

Spread some of this mixture over the ham and cover. Bake at 350 until ham is at least 165F in the middle.

VERY IMPORTANT. Keep ham covered as much as possible. Baste with the liquids in the bottom of the pan and don't let them burn. If necessary, add a little ginger ale to the pan to keep it from burning.

After the ham reaches temp, uncover. Remove cloves and place pineapple rings and cherries on the ham with toothpicks. Heat and pour remaining glaze over ham and heat uncovered until pinapples and cherries are slighlty caramelized (10 minutes).

Take it out of the oven, and baste from the drippings. Remove all cloves or just be careful when serving... but that is a story for another day.

All the previous recipes cover the basics of cooking a ham, and are very good. I only have a few of additional tips, that I think make the difference between a good ham and a great one.

The first is... I don't put my glaze on until the end. I time the cooking of the ham so that I can add the glaze at the last 30-40 minutes. Here's why. Many glazes contain sugar, and other condiments and spices, than can burn, and/or lose their flavor over a long cooking time, I wait and add them at the last 30-40 minutes of the cooking process.

The second tip is to let the ham rest for 30 minutes before carving. This lets the meat 'rest', which allows it to absord some of the remaining moisture back into the meat cells, and firms up the meat so that it slices better, rather than 'crumble'.

Lastly, while the meat is resting, pour the drippings from the roasting pan into a seperator which will let you pour only the concentrated drippings into a sauce pan, and discard the grease. Bring this to a boil in the sauce pan. Once boiling, add 1/8 Tsp of ground cloves, 1/4 Tsp of cinnamon, 1 Tbls of brown sugar, and 1 Tsp of dry mustard. Whisk to combine at the dry ingredients and then add enough water to yield 2 cups of liquid. Remove from heat and let stand 10 minutes.

After ham is sliced, drizzles the mixture over the cut pieces on a platter. This insures a moist, flavorful ham.

I would take the ham, score it in a criss/cross around the outside. I then make a mixture of wet mustard like dijon, brown sugar, black pepper, and garlic powder and smear it around the outside. I cook the ham until it is the right temp/doneness. Enjoy. It was a big hit on Christmas!
