It could be due to allergies. What does the skin look like - any redness or scaling? A little oil in the food helps with dry skin - also weekly bath with oatmeal shampoo. Daily brushing with a mitt and soft brush will help as well - it brings the oils out to the skin more.

You should probably check with the vet to make sure there isn't some underlying condition like allergies or thyroid problems.

First do NOT give a Dane any type of calcium supplements. This is very bad for his joints.

As for shedding the usual cause is diet. If you are feeding one of the low quality foods...Science Diet, Purina Dog Chow, Pedigree, IAMS/Eukanuba or any other "supermarket" brand then you will want to switch to a better quality food.

Corn, wheat, soy & beet pulp and not good ingredients in a food. They are no more then cheap fillers. They have little to no nutritional value, they are common allergens, they cause dry skin and soy causes excess gas which is something you definately want to avoid in a breed prone to bloat, Also there is a study being conducted that strongly suggests that corn & soy may be the cause of unexplained seizures in dogs.
You need a good quality food with meat protein. Some great foods to consider for your Dane:

Canidae, Chicken Soup for the dog lovers Soul adult formula or adult large breed formula, Wellness, California Natural, Innova, Solid Gold, Timberwolf, Percise, premium Edge,Eagle just to name a few.

I personally like the Canidae and the Chicken Soup for my Danes.
