How to saute potatoes? Part boil then chop potatoes into discs then fry, somewhere between shallow fry and deep fry. When finished frying place onto kitchen roll to soak up excess oil. then serve.

Peel, cut into small chunks and parboil for about 10 minutes. In the meantime you should have hot oil in a metal dish in the oven. When this is really hot, remove from the oven and add the potatoes to the oil, making sure all the potato pieces are coated in the oil. You can sprinkle over herbs or spices if you like. Then return to the oven and roast, taking them out occasionally to turn them and make sure they are coated evenly with hot oil.

I've tried sauteing potatoes on the hob but they never turn out as well as the above method, which is my mother's.

Boil potatoes for five minutes, drain and slice into 1/4 inch slices. Now heat a frying pan with olive oil or, preferably beef or bacon fat, until it starts to sizzle and add the potatoes so that each slice is actually on the pan (not oerlapping). You may have to do this in several goes and keep the cooked slices warm in the oven. While they are frying, chuck in a handful of very very finely chopped onion and a pinch of mixed herbs. After three minutes, turn the slices over one by one and they should be golden brown. Three minutes on the other side, remove from pan and drain on kitchen paper, put on a hot plate in the oven and carry on with the rest of the potato slices until you have enough.
Then, eat and enjoy. Yum yum, mouth watering, I may go and cook some for myself now.

variety of ways but I would
slice potatoes to about 1/4 inch or 10mm thickness
and put in ceramic dish buttered lightly on the bottom
layer them interspersed so they are not all piled one on top of the other I also put in onion rings and other stuff like bacon shards
use milk or milk and water to the top layer then
I usually add mix of breadcrumbs and cheese
bake in med/hot oven, after about 15 mins stick a knife in feel the potato resistance as it tells you how much longer you wait
just before it finishes I check how moist
if too dry add a little milk by making a couple of small holes in the side just before you serve
add another layer of cheese and grill

It should be easy since you are leaving the potato skin on. In the morning you can wash, cut the potatoes, and marinate the potatoes with olive oil, season with onion and garlic powders, salt, Italian spice mix and cayenne pepper in a big pot. One hour before lunch time, spread out on a baking tray or trays and bake it in the oven. You can bypass the big pot and spread the marinated potatoes on the tray. Those potatoes will be piping hot to serve at lunch tine

a simple way of doing it is slice your potatoes into thin round discs, take a frying pan and medium heat it on a stove...melt as much butter as you want on it, throw in the potatoes....mix the potatoes and butter together so that all the potatoes are covered i butter....season it with natures seasoning....and if you want you can add onions and garlic.....its really good....just fry until the potatoes are to your satisfaction...usually id say 20 minutes....longer if you want the potatoes softer....its really up to you
