what type of noodle is the healthiest?? is it soba?? iv also heeard of some carb-free ones!! PLEASE HELP!!

Soba is probably the healthiest noodle, but not all soba is the same. The truely healthy soba is made from whole buckwheat and has a darker color. If you find something that says soba on it that is white, (such as chuka soba) there is a good chance that it is a wheat noodle, not buckwheat.

Also, yaki soba does not usualy have real soba in it.

Whole wheat noodles or whole grain are the healthiest. All others are refined and 1) Cause blood sugar to rise and drop quickly and 2) Refined turns to sugar in the blood faster hence turning to fat.

yes ur right, soba is the healthiest noodle. but when you're ill udon is good for your digest.

vermicelli which is made of mung beans. Can have it even when you are on a no carb diet. It is the noodles used in sukiyaki, a japanese dish.
