Went to more than one really good bakery yesterday; have only a finite interest in eating soon-to-be two-day-old bread plain with butter.

What's worth the trouble? Bread pudding, and...?

You could make up some garlic butter and slice bread almost through, spread with the garlic butter wrap in foil and freeze for a later date. I freeze my bread most of the time (live on own) and just take out what I want when I want it. Slice, wrap into portions and freeze, then if you want to make some brushetta, or other fancy dinner bread you can.
Mix finely chopped sun dried tomatoes with butter or margarine for a nice flavoured bread side dish with pasta, you can also use your favourite pesto.
Good old bread and butter pudding is a good stand by as long as you don't make enough for 20, I still make too much.
Quick recipe for 1-2 people, beat together 2 eggs, milk and sugar to taste. pour into greased pyrex or similar dish. Butter bread cut into squares and place on top of egg mixture to cover. Sprinkle cinnamon over dot with extra butter and cook in oven until golden brown.
Variations, bread on bottom spead with jam, pour egg mixture over and finish off as for plain one. Sultanas can be added if liked as well.

You could try making leftover bread patties:

4 ounces leftover stale bread
3 eggs
4 ounces different leftover hard cheese, grated
1 tablespoon parsley, chopped
1 sprig fresh basil leaves, chopped
1 sprig fresh marjoram leaves, chopped
4 tablespoons olive oil
salt and pepper

Cut the bread into small cubes, and put into a bowl with a small glass of water.
Allow to soak until it softens.
Squeeze out all the water and crumble with your fingers.
Beat the egg in a bowl and add the chopped herbs, salt and pepper to taste.
Add the bread and the grated cheese.
Mix well.
The mixture should be soft, but consistent.
Heat the oil in a pan.
Make small patties of the bread mixture and drop into the hot oil.
Flatten with a spatula.
When one side is golden, turn the patties and fry to golden on the other side.
Drain on absorbent paper and serve with a bit of fresh pepper grated on top.

I like to cut the bread up in small squares and make seasoned croutons out of them. They're great for salads, or just for snacking on! Leave the cut up pieces of bread in a oven (turned off) overnight. The pieces of bread should be dry by morning. In a separate pan, melt some margarine, add some fresh grated onion, garlic powder, italian seasonings, salt & pepper. (You can play with the ingredients to suit your taste). Mix with dried bread and put in 250 degree oven for 30 minutes or until crispy.

There's nothing like putting provolone and cheddar cheese onto sourdough bread and then sticking it in your oven at 400 degrees F for about 5 minutes. The bread gets golden, the cheese bubbly..mmmm

make little pizza's in the oven excellent! and garlic bread with cheese / Cinnamon toast in oven/ grilled cheese / you can also freeze the bread in the plastic bag's from the grocery store doubled and tied off at top

My mother does a fantastic savoury bread and butter pudding using cheese, onions, milk, egg, cream, garlic and of course bread

I keep meaning to do it and forgetting!
