all colour comes from pigments. some plants have the biosynthetic pathways to make some pigments but not others. in flowers, the pigments are stored in the petal cell vacuoles. the vacuoles have a pH level that is usually determined by the plant's biology. the vacuolar pH influences the final colour seen.

blue roses are a good example. roses do not have the biosynthetic pathways to make blue pigments. experiment to give roses the biosynthetic pathways to make blue pigments resulted in violet roses. this is because of the vacuolar pH influencing the final colour seen.

They have pigments just like people. A pigment absorbs certain colors of light and reflects other colors. We see the color that is reflected. The genetic material that makes up the DNA of the plant dictates the molecular structure of the pigment which in turn filters the color of light to either absorb or reflect.
