If you looking for a place with such a machine and you're near San Francisco see http://www.vinovenue.net

If you are looking to buy such a machine, Vinovenue, and a similar tasting shop in Napa Valley called Staves, bought their machines from a European company called Enomatic -- see http://www.enomatic.com/

The wines stored under nitrogen in such a system -- you need to fill the empty space in a bottle with an inert gas because oxygen will fast make the wine go off.

I've had several glasses of wines from dispensers that use nitrogen and they seem OK.
