It was a term created to show that the "fairer" should be considered when entering a room for her youth beauty would prove a man's worth. If the wife was young and beautiful obviously the man had great wealth and stature. An old wife meant a man had recently become wealthy.

I had always thought it was when seafaring travel became popular, in case of emergency it was "women and children first" into the lifeboats.
