I just used all the pickles in the pickle jar. I have about half a jar (8 oz) left of juice. Is there something I can make and utlize the pickle juice.

I found that mixing chopped dill pickles with mayonnaise and tuna for a tuna sandwich is very tasty and easy to make. I also use the dill pickle juice and mix it with mayonnaise and mustard for a salad dressing. I don't think an alcoholic beverage can be made from the pickle juice because the pickle juice probably won't ferment, and if it were to ferment, one would have to wait a long time for it to do so, and it isn't worth the wait. I also use dill pickle juice mixed with mayonnaise and mustard for a dip for chips, pretzels, and veggies because it is easy to make.

My brother made picklesicles with pickle juice once for my son's birthday party. He poured the juice into small Dixie cups, put a popsicle stick in each one, and put them into the freezer.

They were a HUGE hit!

But unless you have a 6 year old, that "recipe" isn't likely to go over well at your next party!

Other alternatives? You could use it as a part of a marinade...

Pickle juice is great for a quick way to pickle beets. Cook your beets, slice them and let them sit in the pickle juice overnight in fridge.. Delicious.

Mix with mayonnaise and put in potato salad.

Use as a marinade for meats (especially fish) or vegetables (mix with some olive oil and fresh herbs).

Make a sauce to serve over fish (mayonnaise, pickle juice, fresh dill, salt and pepper).

Use in homemade barbecue sauce or add to your favorite brand of bbq sauce.

Hard boil eggs, peel them, and put them in there for a couple of days. Yum
