A number of things combine to make truffles very expensive:

Truffles are rare and difficult to find. Certain animals, such as pigs and squirrels, like truffles just as much as we do, putting us in competition with nature to gather them first.
Truffles are a seasonal crop that can only be harvested for a short period each year.
Fresh truffles can only be stored for a few weeks before loosing quality.
There are very limited places in the world (mostly in Europe) that are renowned for producing the "best" crops. Many of these areas have been destroyed by development and environmental damage

Truffles are expensive all right, but a little goes a long way. You can make a truffle-flavoured omelette by putting a bowl of the beaten eggs in the same cupboard as the truffles overnight, then use the truffles for something else. Here in the South Island of NZ we're trying to start a truffle growing industry like they've got in Périgord, France. The French have nothing to fear. Even if everybody could grow truffles there'd still be a strong demand.

As far as I know they grow underground near a specific tree and a farmer will go out with a pig to find them. These pigs love the Truffles and can smell them through the ground. So since they still have to be harvested this way it is this that makes them expensive.
Originally from France they have a flavour that can not be replicated by any other means.

First of all, they're rare.
Then there's the fact you can't farm them. You have to find them in the wild, with a dog or sometimes pigs.
Plus, they're only good from October to December.
Also, they're quite popular and sought after by many high paying clients. More demand than supply.

Then there's white truffles, which are even more rare and cost tens of times more than the black ones.

Oh and they taste really good...

they are really expensive because they are very rare , like you can only find them during the months of december, november, and october. they can not be grown by anyone, they just natruly grow under a certain tree which is also rare, and farmers needs a pig or a beagle(dog) to find them and they are underground do the dog or pig must be trained to have very good sense of smell to find them. And since i live in hong kong which is like really far from the homeland of the truffle which is France.

I hope this helps you
and i hope you choose my answer as hte best =)

If you are talking about truffles, the mushrooms, because picking them is very labor intensive and slow. Many of these truffles are from France and the cost of living in France is higher than in the US. If you are talking about truffles, the candy, because the booze used in them adds to the cost and many of the candy truffles are handmade.Or at least, handfinished.
