Chickpea and Shrimp dip

1 can cooked chickpeas (also known as garbanzo beans)
300g cooked prawn meat
2 cloves garlic, minced
2 tbsp extra virgin olive oil
1 cup chicken stock
1 tsp curry powder
1 bunch coriander, chopped
Salt and pepper
Toasted sesame seeds

Drain chickpeas and place in a blender together with the garlic, olive oil, curry powder and chicken stock.
Blend until mixture is the consistency of mayonnaise and add the prawns. Pulse for a few seconds to chop up the prawns.
Remove chickpea dip from the blender and place in a bowl. Fold in the chopped coriander. Season with salt and pepper to taste.
For the best flavour, let the dip mature in the fridge for an hour or so before serving.

Peanut Butter Dip
serve with steamed vegetables.
2/3 cup water
1/3 cup creamy peanut butter
1 clove garlic, minced
2 tsp grated fresh ginger
2 medium scallions, chopped
2 tbsp packed brown sugar
2 tbs soy sauce
1/8 tsp chili powder
1 tbsp fresh-squeezed lemon juice

In small saucepan, bring water to boil. Stir in creamy peanut butter, garlic, ginger, scallions, sugar, soy sauce, and chili powder. Simmer 2 minutes. Remove from heat. Stir in lemon juice. Set aside to cool slightly or refrigerate until ready to serve.

The recipe using Spinach, sour cream and onion soup presents really well if you get a round loaf of bread hollow it out and put the dip in the hollow to serve. You use the removed bread/crust to dip into the dip. As the dip goes down you then tear the bread off from around it to dip. This really is a great dip and no washing up. WOOoooo Oooooo.
My favourites here in Australia are, Sweet Corn relish mixed into sour cream or Tomatoe and Chili Relish mixed into sour cream. The amount of sour cream should be double the amount of relish.
You can do same with these using bread as the 'dish', size of loaf depends on how much dip you make.

1 pint Sour Cream
1 cup mayo
1 Tbs fresh chopped dill weed
1/4 tsp garlic powder
1/4 tsp salt
1/2 pkg frozen spinach
1 bowl bread

mix the mayo sour cream and the chopped dill and set in the fridge so the flavors can marry
put the spinach in a colander to thaw and drain all of the liquid
sprinkle the salt on the spinach while it is thawing to help dry out the spinach. then squeeze the spinach dry and chop finely.
mix into the sour cream mix and refrigerate a half hour longer.
take the bread bowl cut open at an angle so you have a bow and scoop out the bread from the center. put the dip into the bread and surround it with the scooped out bread and mixed raw veggies

We make a yummy dill dip for family gatherings its goes as follows:

Dill Veggie Dip
2/3 cup Hellman's mayonaise
1/3 cup sour cream
1 Tablespoon dried onion flakes
1 Tablespoon dried parsley flakes
1 Teaspoon dill weed
1/2 Teaspoon garlic salt
Best if no substitutions are used. Mix all ingredients together and refrigerate over night for flavours to blend well and spices to rehydrate. Recipe doubles easily and goes fast so I almost always make a double batch....Hope you like it!

White Bean Dip Recipe courtesy Ellie Krieger





2 (14-ounce) cans white beans, rinsed and drained
2 tablespoons roasted garlic
3 tablespoons extra-virgin olive oil
3 tablespoons freshly squeezed lemon juice
Salt and pepper
1/4 cup parsley leaves, to garnish

In a food processor, combine the beans, roasted garlic, olive oil and lemon juice and process until smooth. Season, to taste, with salt and pepper. Garnish with fresh parsley leaves and serve with your favorite vegetables.

I love this recipe. It is so tangy and yummy. You can serve it with pita chips, corn chips or crackers.

Hummus

Ingredients
1 (15 ounce) can Garbanzo beans, drained, liquid reserved
1 clove Garlic, crushed
2 teaspoons Ground cumin
1/2 teaspoon Salt
1 tablespoon Olive oil

Preparation
In a blender or food processor combine garbanzo beans, garlic, cumin, salt and olive oil. Blend on low speed, gradually adding reserved bean liquid, until desired consistency is achieved

1 to 1 1/2 pkg Lipton onion soup mix
1 large container sour cream
1 pkg frozen spinach

Thaw spinach and squeeze out water. Mix with other ingredients. Leave in fridge for a while to let flavors blend. Good for veggies, and chips.

A good cold dip I've made that's a big hit is:

Make ranch dip according to packet directions, add bacon bits and shredded cheese to the dip...chill and eat up!
