I tasted a cake when I visited the Philippines that was delicious, and was so light and fluffy; not like the cakes I'm used to in the U.S., which are heavy and often too sweet.
This cake had a delicate, only slightly sweet taste.

Many Asian bakeries use a very fine rice flour. Also, they generally cut back on the sugar, and use sweet fruits and purees on the outside as decorations and fillings between layers. Also, icings are more of a cream than a sugary frosting.

In Cantonese, the term for it, is literally, "egg cake." The Filipinos make their cakes the same way. You can make it in a ring pan, called a "chiffon cake" in all kinds of flavors, i.e. orange, pandan, etc. Or just the plain yellow kind made with egg, butter (not margerine), a bit of sugar and flour SIFTED with baking soda. Sifting the flour aerates it, and this makes the cakes light and fluffy. Whip the batter until there are no lumps. The reason the cakes are not sweet when made is because Asians like to eat the cakes dipped in coffee and tea. The cakes are primarily tea cakes, not a heavy and rich dessert cake. Frosting is not used in these types of cakes, because the tropical climate is hot and humid and refrigeration is sometimes not an option. Instead, butter is whipped with pureed fruit to form a very light cream, and two layers of cakes are sometimes stacked with a layer of the butter cream in between.

I bet you the batter had eggs in it that were fluffed using one of those very large electric blenders (I think they're made by kitchen aid). You'd probably really like angel food cake or other things like that - see if you can find recipes for angel food cake - torts are another kind of treat that have eggs. So just look around.

if it was fluffy, for sure there was egg whites beaten to form peaks,and the could use baking powder and soda to make more bubbles.
