i am makeing a huge breakfast party for my family and i want to know any good recipes for eggs. Please help me.

Try this..... easy and delicious....

Asparagus & Eggs on Toast with Tomatoes & Ham
Perp 15 min / Cook 6 min (4 Servings)

24 thin stalks asparagus or 12 thick stalks, trimmed
4 slices seven-grain bread
4 tsp Dijon mustard
8 slices 97% fat-free ham
2 hard-cooked eggs, peeled and sliced
8 thin slices tomatoes
2 slices provolone cheese, cut into thin strips

1. Preheat broiler.
2. In skillet of simmering water, cook asparagus until crisp-tender, 3 to 4 minutes. Drain well.
3. Place bread slices on baking sheet. Broil 3 to 4 inches from heat until bread is toasted, about 1 minute each side.
4. On each bread slice, spread 1 tsp mustard then arrange 2 slices of ham, 6 thin or 3 thick asparagus spears, half of 1 sliced hard-cooked egg, 2 tomato slices, and a quarter of the provolone strips.
5. Broil sandwiches until cheese is melted and golden brown and sandwich is heated through, 1 to 2 minutes.

Lastly........

Egg Burritos with Roasted Bell Peppers
Prep 5 min / Cook 5 min (4 servings)

4 flour tortillas (8 inches), warmed
1 tbsp vegetable oil
8 large eggs, lightly beaten
1/4 tsp salt
1/4 tsp black pepper
1 cup roasted red bell pepper pieces, seeded and cut into 1/2-inch slices
2 tbsp chopped cilantro
1/4 cup bottled salsa, at room temperature

1. In medium nonstick skillet over medium heat, heat oil. Add eggs, salt, and pepper. Stir until eggs start to thicken slightly, 1 to 2 minutes. Stir in peppers and cilantro. Cook, stirring occasionally, until eggs are soft-scrambled, 2-3 minutes.
2. Spoon quarter of egg mixture in middle of each tortilla. Top each with 1 tbsp salsa. Fold edges of tortilla over, then roll to enclose filling.

*** To warm tortillas, preheat oven to 350 deg F. Steck up to six tortillas at a time and wrap loosely in aluminum foil. Warm in oven for 8 to 10 minutes. Leave wrapped until ready to serve.

Did you know..... that corn tortillas are made from only cornmeal and water, but flour tortillas have wheat flour, vegetable shortening or lard, water, and salt?

Breakfast burritos - Scramble eggs, with shredded cheese, crumbled bacon, ( or sausage ) onion, bell peppers, if you like, mushrooms - really anything can go in it. Put it on a tortilla and roll up and eat - you can put hot sauce or salsa' on it if you want also. You have to make this in the morning, but it is good - cut a hole in a piece of bread, butter the cut out piece and the other piece, put it in a frying pan and break an egg inside the hole. Cook until done, only flipping once the egg has cook and won't run when you flip it. Brown the round piece on both sides - and use it to dip the runny part of the egg(yolk) when you are eating it.

My mom makes a great frattata. Its amazing. You get a greased baking pan and in a separate bowl, beat 7 eggs. Pour in the egg mixture then add in a can of diced potatoes. Now you can add in peppers, onions etc. Feel free to also add in any deli meats like bacon. Sprinkle the top with cheese (or leave it out for a diet version) Then cook for 10 min of 450 degrees or until its is no longer a liquid. You can also cook something similar on the stove in a big pan. This is like an omelette accept it has the potatoes.

I used to make scrambled egg for 50 for breakfast - it was my favourite job - but woe betide me if there was a tiny grain of shell.

I would use 2 eggs per person
2 tbs of milk per egg - or for decadence 1 milk, 1 cream
Salt and pepper - though go easy, people can always add more later.

Mix all the night before and keep in a cool place

Stir again.

Heat butter/oil and add egg mix.

Just before setting take it off the heat and it will continue to cook on its own.

I love something my family has always called an egg in a basket. We take a peice of sour dough bread, a big peice, and butter it on both sides. Then you take a glass and use it like a cookie cutter to cut a hole in the middle of the bread. You put the butterd bread with the hole in the pan and crack and egg into the hole. Let it cook on the one side until the bread is cripsy and brown and the egg is mostly done. And then flip it and let it cook on the other side. I usually do it on a medium setting.

I made them this morning there called Framed Eggs

You need : Bred , Eggs , oil , circle cookie cutter or glass cup , pan

1.You cut a hole in the center of the bred using the cutter or glass.
2. Put the Oil in the pan wait until warm.
3. Stick the Bred with hole in the pan and crack the egg into the bred.
4.Flip it when you think is right .
5.Take it out and eat

If you want you can toast the bred you cut out .

i like to scramble them until they are 3/4 of the way done, add cheese and take them out after the cheese has melted. put them in a bowl and add some chopped green onions. its simple and it is the greatest eggs ever.
