Well I like this one. Of course if the people dont like tomatoes I guess that you could make it with alfreado sauce or even pesto. And I usually add black olives and mushrooms to it. And since it is a vegan recipe you can use regular chees and skip the pam part....if you eat cheese.

Cheesy Pasta Bake

Ingredients (use vegan versions):

1 box Mori Nu tofu, extra firm
enough pasta to fill an 8x8 pan (hand full)
8 ounces of your favorite marinara
1/2 block of vegan gourmet mozzarella
spices: parsley, basil, garlic
optional: cayenne

Directions:

Cook the spaghetti halfway. You don't want it to be mushy once you bake it.

While that's cooking, drain the box of tofu and put it into a medium/small bowl. Squish with a fork into small pieces.

Add the parsley, basil and garlic (add more of the spices you like best). I mix in a lot of all three. Blend with your fork but don't squish the tofu into too tiny of pieces.

Then, grate your mozzarella. Use 1/3 to 1/2 of a block of vegan gourmet mozzarella. Put aside.

Drain pasta. Put the pasta into the pan. Add all of the tofu ricotta mix. Mix them together.

Now pour your pasta sauce on top of the pasta/ricotta mixture. Pour a little more sauce than you think, so it doesn't dry out.

Mix all three ingredients well. You can even put some of the extra ricotta on top, if you had any left over.

Once you've mixed the pasta, ricotta and sauce so that it's equally spaced in the pan, simply add the vegan gourmet mozzarella on top. Use as much as you like.

It's important to spray the top of the cheese with your Pam or other oil spray. This makes the cheese on top melt smoothly and have a golden color when it's done.

Bake on high, at least 400 degrees (even up to 500) until it bubbles. Don't be afraid to let it cook until it bubbles and starts turning brown.

Serves: 4

Try pasta dishes to start. I make a really great vegetarian lasagna using a typical lasagna recipe with ricotta cheese, tofu, and spinach, with a tasty marinara sauce.

My kids love my lentil stew, which is an Indian-style vegetarian dish and very simple. Just sautee your favorite vegetables (onions, carrots, garlic, mushrooms, peppers--whatever you like) in some good olive oil just til they are softening, then add a half bag of rinsed and cleaned lentils. Add your spices (I use cumin, garlic salt, pepper, tumeric, ginger), then put in a cup of vegetable broth, and three cups of water, and raise the heat to medium. Cover and let simmer about an hour, checking every ten minutes or so wo make sure it's not cooking too fast. If it seems too dry, add another half cup of water and stir. Serve over basmati rice. Yum.

I'm picky about veges, so it would be tomatoes,pasta,olive oil, basil. Soup minestrone. The beans are the meat in the recipe. Tomato, salt, olive oil. Love bread. Grilled vege sandwich. Soy base ice cream (not bad at all), they have a whole vegetarian section in grocery store.

Burritos with rice and beans, no meat, or add cooked TVP or boca burger to sub for meat.

Depends what they are "picky" about. If they are meat eaters, most meat eaters I've met seem to like Boca Burger. Especially ground up and cooked, many of them don't even notice in a "meat" sauce or chili.

Nearly Instant "Beefy" Chili

* One 12 to 16-ounce package soy "crumbles"
* One 16-ounce jar tomato salsa, mild or medium-hot, as preferred
* Two 16-ounce cans pinto beans, drained and rinsed
* 1 cup frozen corn kernals, thawed
* 1 teaspoon round cumin

Preparation

Combine all of the ingredients with 1/2 cup water in a soup pot or steep-sided stir-fry pan. Bring to a simmer, cover, and simmer gently over medium-low heat for 15 minutes. Serve in shallow bowls.

This bright and colorful dish will please the palate of pepper lovers. Served over rice with faux meat strips, it can be a satisfying meal in its own right. It would also work well as a side dish.

Makes 4 servings
Ingredients

* 1 small-medium of each: orange, red, yellow, and green bell peppers, seeded and cut into thin slices
* 1 carrot, peeled and diced
* 1 small tomato, chopped
* 1/2 medium onion, chopped into large pieces
* 1/4 head cabbage, chopped
* 2 cloves of garlic, minced
* 2 tablespoons extra virgin olive oil
* 1 tablespoon soy or tamari sauce
* Basil, sea salt, and freshly ground black pepper to taste
* 3 or 4 scrapes of lemon zest
* 1/4 lemon
* 1 package of faux-meat strips (Smart Strips) (optional)

* Have preferred rice prepared beforehand.

Jablka Na Winie Czerwonym (Baked Apples with Red Wine)

The recipe doesn't call for the apples to be peeled, but I peeled them anyway (other similar baked apple dishes on the net called for the apples to be peeled). It helps the flavors to absorb into the apple nicely. I suspect it's tasty either way.
Ingredients

* 8 apples, cored
* Cherry or strawberry jam
* 1/2 cup sugar
* 1/2 tsp mace or nutmeg
* 1 cup red wine
* 1/2 tsp vanilla

Preparation

Place apples in a greased casserole or baking dish (Earth Balance or a little oil will work). Fill each apple with jam.

Blend sugar and mace (or nutmeg) and stir in wine and vanilla. Pour over apples. Cover and bake at 350 degrees F. for 1 hour. Refrigerate for 2 to 4 hours before serving.

maybe like stir fry vegetables.they are really good!that's what my uncle first tried.veggies are best for u.tha meat has 2 much salt in it because if you look on tha ingredients at trader Joe's they have lots of salt in it.but the meat is good and put barbecue sauce on it.a good meat is(lamb)!with barbecue sauce on it!

Make something colorful...use corn (yellow), tomatoes (red), bell peppers (green), orange (carrots) and white (rice). Top with fruit.
