The Samba Room on Larimer has good Cuban food and great Mojitos. For a chain Maggianos is pretty good.
Rosa Linda Cafe on west 33rd for great authentic Mexican.
Sambuca Jazz Cafe on 15th St for music and food.
Black Pearl on Pearl St. has a great selection of wines by the glass and very good food.

Saigon Bowl on Federal and Alameda in the Far East Center has fantastic Pho. Jerusalem Restaurant on Evans near DU is open 24/7 and you just can't go wrong there for Middle Eastern. Thai Basil (multiple locations) has awesome Asian Fusion. If you want upscale try Chi Bistro on South Gaylord or Black Pearl on South Pearl.

The place I like is actually in Aurora. It's called Armadillo. I love mexican food and try to get there when I'm in town.
