I'm pretty good at making 'typical' omelets, but have never been able to make them as fluffy as the ones served in restaurants. are they baked? What's the trick?

Add a little water (a tbsp or less) to your eggs when you beat them will help them to be flufflier when they are cooked. It's something about the steam created by the water as it evaporates when cooking.

4 large eggs
2 tablespoons water
1/4 teaspoon salt
1/4 cup chopped green bell pepper
1/2 cup chopped ham
2 tablespoons chopped onions
1 tablespoon butter
1/2 cup shredded cheddar cheese

1. Preheat oven to 325°F (160°C).
2. Separate the eggs.
3. In a medium bowl, beat the egg whites until fluffy then add water and salt. Beat until stiff.
4. In another bowl, beat yolks until thick and lemon-colored. Gently fold into the whites. Add chopped green bell pepper, chopped ham, and chopped onion.
5. In a oven-safe skillet, heat butter until sizzling. Pour in the egg mixture and swirl until rolling up the sides. Reduce heat, and cook slowly for 8 to 10 minutes, do not stir during this cooking time. Place the oven safe skillet in the oven and cook for about 10 minutes. Sprinkle shredded cheddar cheese on top and return to the oven until the cheese melts. Fold in half and remove to platter.

Add about 1/2 teaspoon of Bisquick per egg. Add whatever seasonings you like in your eggs. Blend together in a blender (or use a stick blender). You want to beat the eggs until they are a little foamy at the top, and then cook them in a pan with margarine or a non-stick cooking spray over medium heat, stirring constantly until done. They are delicious and super-fluffy!

Use a large scoop of sour cream to the omelet and it not only comes out fluffy, but has a less likely chance of being burned!!!

i worked at huddle house for 6 years, all you do is put your eggs in a blender then pour into hot pan with about a tsp of oil. flip and add ingredients and fold. whallah! very fluffy omelets.

Whip with a little evaporated milk . Heat pan on medium put eggs in and than put flame as low as possible. Eggs fluff at lower heating. Good Luck

I asked the lady at IHOP that same question and she said they put a scoop of made up pancake batter in with the eggs. Made sense after she told me that. So I've been doing it that way and it works!

Separate the eggs and whip the whites until you have at least soft peaks.

Then scramble the yolks and fold them into the whites.

Cook this on top of the stove initially, to set the bottom, and then bake it.

I usually add half the quantity of self raising flour to the plain flour and that makes it more like hot cakes also an egg and a pinch of both sugar and salt.

The trick is more air. Whip the eggs in a blender before cooking.
