I am a working mom and need to find some great recipes for a 4yr old. We eat only poultry and seafood as a meat. And, please dont tell me pizza, macaroni or McDonalds! LOL.

Chicken quesadillas are so easy and fast to make!
Here's my super lazy recipe:
1 can of chicken meat...yes...i said can; weird i know but it makes life so much easier
1 package of Shredded cheese (i use a combo of Mexican mix and Mozerella)
Flour tortillas
butter/margrine
salsa
If you want add some refried beans

ok, you drain the chicken and heat it up in a pot with the cheese and salsa...by the way only put as much cheese and salsa to suit your taste...beans too if you want but if you put too much itll taste like a bean burrito

when all the cheese melts and everything forms a gooey mess in the pot, spread a scoop of the mixture inbetween 2 flour tortillas, Like a sandwich! (keep that in mind when you buy the tortillas, 2 for each quesedilla so a pack of 8 will give you only 4 quesadillas)

let some butter melt onto a skillet or frying pan and heat the tortillas up...as if you were making a grilled cheese sandwich.

and youre done! server with salsa and sour cream if you want

its freaking easy and yummy


PS- when you use up all the filling, fill the pot up with water asap! so that you dont have a hard time cleaning it. otherwise the cheese will stick.

Apple Turkey Burgers

1 pound ground turkey
1 granny smith apple- peeled, cored and grated
1/2 tsp ground corriander
1/2 tsp salt
1/4 tsp black pepper
combine above ingredients in a bowl, form into 4-5 patties and place on broiler pan coated with nonstick cooking spray. Broil for 6-7 minutes on each side (turning only once)

top with this great cranberry topping:
in a small bowl combine 1 (6oz )can jellied cranberry sauce, 1/2 tsp dried mustard, 1/8 tsp cinnamon, 1/8 tsp nutmeg.

serve on hamburger buns.

You can honestly get this on the table in 20 minutes from start to finish... And I bet your 4 year old would eat it. If he doesn't like the cranberry topping melt a piece of cheese over his- but the adults can have a great meal (without mom having to cook 2 separate dinners!)

This is an easy recipe it looks like alot but really is easy and quick .. cook all in one pot. Good luck ! CHICKEN AND SAUSAGE JAMBALAYA 3 lbs Chicken portions (I used skinless ,boneless breasts)cut into cubes 3 Tbsp. Butter or margarine 1 lg. Onion -roughly chopped in chunks 3 stocks Celery -roughly chopped in 1" pieces 1 lg green pepper - roughly chopped 1 clove garlic - chopped ½ - 1 tsp cayenne pepper ½ - 1 tsp. Black pepper ½ - 1 tsp. white pepper 1 cup uncooked rice(not minute rice) 1 - 14 oz. can tomatoes- chopped with juice 6 oz - smoked sausage cut into ½” slices(I use Italian Hot sausage) 3 cups chicken stock (oxo cubes are fine) Melt butter in a large saucepan, and fry the onions slowly ,til start to brown slightly, add celery, green pepper and garlic and cook for a couple minutes. Then add the remaining and mix well. Bring to boil then reduce heat and simmer until chicken is cooked and rice has absorbed the liquid. (If you need more liquid add a little water). It’s ready when rice is tender and chicken is cooked. Enjoy! If you don’t have white pepper add a tiny bit more of the other peppers. If you don't like spicy then don't add the pepper and use mild sausages. Cooking time = 20 - 25 mins.

Salmon is a great meat choice! At 400 degrees for 20 mins. You have a main course. Add some rice for 15 mins and a side of veggies and you have a balanced meal. Same goes with crock pot recipes, you can just throw your meat in the pot in the morning it should be ready for dinner without any fuss.

Wal-Mart has bags of frozen stir fry mix for a buck and a half. Toss is some chicken or shrimp in the skillet and it'll be done in 10-20minutes. If you buy precooked chicken strips it'll be the quickest :-)

Try breakfast for dinner! Like whole wheat pancakes with fruit, or baked oatmeal or scrambled egg wraps or your own low fat version of an egg mcmuffin using egg substitute and lowfat cheeses and whole wheat english muffins!

I know many but your best option is to go to foodnetwork.com and look for lowfat meals
