Quinoa Breakfast

1/2 c of quinoa
1 c of water
1/4 c of apple, thinly sliced (I grate mine)
1/4 cup of dried fruit (diced apricots, figs, dates, raisins. Fresh berries would be wonderful in this too)
1/2 tsp cinnamon
a pinch of cardamom, nutmeg if you have it
soy, almond or regular milk
1 tbsp sweetener (date sugar, honey, stevia, brown sugar)

Rinse quinoa and add water. Bring to a boil. Reduce heat and simmer for 5 minutes (quinoa should start to just shed its outer ring). Add pear and dried fruit and cinnamon. Simmer until water is absorbed. Pour about 1/4 cup of soy (or almond, oat, regular milk) over to create a creamy consistency. Add sweetener to taste. I also add 1 tsp of ghee (clarified butter).

If you've never had quinoa, you are in for a treat. It has an interesting crunchy-creamy texture and sits light in the stomach. Best of all, it's very high in protein and B vitamins. For more info. on quinoa, check out: wholehealthmd.com

Make a porridge out of the quinoa and add figs or stoned dates.
