When I say "old", I mean honey that's been sitting on the shelf for a while and has become a pale sort of sugary paste.

I find that tasty and I know the honey has not gone bad, but it lost it's honey texture and taste.

Do you know a nice dessert or any culinary application for the "honey paste"?

Honey doesn't go bad. Just warm it (I use the M/w) for a few minutes to melt the sugary crystals adn get it all flowign again.


Bruschetta with Blue Cheese, Pecans & Honey

Pecan- or Walnut-Raisin Bread
Walnut Oil
Crater Lake Blue Cheese or similar, cut into shards
Spiced or Toasted Pecans or Walnuts, coarsely chopped
Flavored Honey (such as chestnut or lavender); plain OK too

Slice bread ½” thick. Toast under broiler or in toaster oven. Brush with walnut oil. Top w/ chopped nuts, shards of blue cheese, and drizzle with honey. Strips of proscuitto are also good on these.

Try heating the jar of honey by opening it and standing it in very hot water. My favourite honey products are mead, which is fermented honey (you'll need to add fruit juice or nutrient chemicals as honey lacks yeast nutrients), honey flavoured ice cream, and a soft drink made by mixing honey and lemon juice. In Ethiopia they use honey to sweeten coffee and it tastes really good.

LOL You can bring your honey back to life by loosening the lid and placing the jar in a shallow pool of simmering water. After the developed sugar crystals...uh...undevelope, you will have honey again. :) In the meantime...make some chicken fingers and try out this honey mustard sauce:

mayo, yellow or grainy mustard, horseradish, honey (of course), lemon juice, pepper, paprika, and a smidgen of salt. Mix this up to your taste. It is hard to screw it up. FYI: Horseradish and lemon juice are to be used in little amounts. Its killer.

Also...if ur honey is in a plastic squeezy jar...just forget it. Throw it out and buy a new one.

Baklava. If you heat the honey, it'll get all smooth again.

place it in a pan of hot water to" melt " it
use it on pancakes waffles or french toast
but if it doesn't taste good why are you saving it --toss it
