My best guess is that you mean French term: "mirepoix" is what French chefs call celery , carrots, onions & garlic sauteed together in butter or olive oil. These ingredients are also known as the "trinity" among many cooks, but of course trinity is an English word!

BTW,

a "sofrito" is a sauteed mixture of tomatoes, peppers, garlic, onions & herbs...

and "celerina" is a town in Switzerland!

BTW...for the non-believer below...a soffrito is DEFINITELY the mixture this man is asking about! The mixture you are talking about sounds like some sauce for gods sake! I am Italian...I also watch a lot of Italian chefs on TV. Soffritos vary in the many provinces of Italy...some are carrots onion and celery...some are carrots, onions and garlic...some are just carrots and onion. Everyone has their own.

The ITALIAN term is soffritto. Sofrito is the Spanish term. Mirepoix is the French term. They all refer to a combination of aromatic ingredients used as a base for dishes. And there can be variations of the ingredients.
