I'm making a huge batch of Keilbasa and Kraut (in a roaster).

I'd like to cook it in beer. Any tips? I've never made such a huge batch. Any seasonings and such that I should add?

All answers are appreciated.

I like to brown the kielbasa, first, just my preference. Drain the sour kraut, mix in some caraway seeds, add beer the kielbasa, and slow cook. Sorry i don't have amounts, I just do it to looks. Don't add too many caraway seeds though.

Kielbasa is best cooked in beer! Make sure you rinse and drain your kraut well. You can add a little chicken stock to it as well. As for spices, I'd suggest some mustard seed and fennel seed as well as the typical salt and pepper. You can also add some thinly sliced onion and oh yes don't forget the garlic! My mom has also added a diced apple. A small amount of brown sugar can be added to cut down on the tartness. Do this in small amounts at a time to taste.

Allow 1/3 to 1/2 lb of kielbasa per person. Use large aluminum roasters for cooking. Easier to clean up that way. One can 15 oz can of kraut will serve 3-4 people. Hope this helps! Good Luck!

Wow, I always just put the kielbasa and kraut in a pan and heat it until it's warmed through. I've never had a problem adding just water to get the liquid level over the sausage. Keeps the flavor pure. My mom gets ambitious and throws diced potatoes in there, too.

However you cook it, don't forget the gas mask for the aftermath. :)

I don't add any seasoning when I cook this dish, for the sausage is plenty spiced enough for our liking. The only thing I do differently is add caramelized onions at the last 30 minutes of cooking.

Soooooooo simple... just toss the sausage and kraut in a crock pot or pot on the stove and pour one can or one bottle of beer over it. Heat, eat.

when I do it I use a red wine instead of beer and put some potato chunks in it. just put in casserole dish, cover and cook

cook the kielbasa on a charcoal grill with hickory chunks. its the best.
