Hi all. I bought 2 logs of pork tenderloin. They are already seasoned but I am not sure how to cook them. What temp? What pan? Thanks for the help.

Sear them on the stove in a sautee pan on high heat just until the outside is golden brown.
Move them, in the same pan, to the oven set to 375, or so. In my opinion, pork tenderloin is best medium rare, but most people prefer medium (don't worry, the disease associated with uncooked pork, trichenosis (sp?), has been completely erradicated). Because the tenderloin is the most high-quality and tender cut from a pig, it should still be pink in the middle. Beyond that point, it just gets dryer and tougher. So you should take the pork out when the internal temp is 145, probably about 20-30 minutes. Let it rest for 5-10 minutes, and the temp will rise to 150, which is Medium. Delicious!

Cook it on the grill over medium heat for probably 30 mins
More than likely it will have 3 sides kinda... cook it for 10 mins on each side the cut it in half... check it's color with a light.
If it's not good and white all the way through give it another 5 mins then check again. Cut it in 3/4" thick pieces. Enjoy!

2 pounds pork tenderloin
4 slices bacon
1/2 fresh pineapple OR 1 (8 1/4-ounce) can sliced pineapple
1 tablespoon butter or margarine
1/4 cup sugar
1/4 cup white wine vinegar
1 1/2 cups chicken broth
1 teaspoon green peppercorns in vinegar, drained
1 tablespoons cornstarch
1 pound fresh spinach, washed
Place tenderloin in open roasting pan; criss-cross two bacon slices over each. Bake in a 400 degree F. oven for 20 minutes or till meat thermometer reaches 155 degrees F.
Pare fresh pineapple and slice into 1/2-inch slices. I
n a 10-inch skillet melt butter. Saute pineapple; remove.
Add sugar to skillet and cook over medium heat till carmelized, about 5 minutes. Add vinegar and chicken broth; bring to boiling and cook till sugar dissolves. (If using canned pineapple, drain and add juice to chicken broth.) Add peppercorns and boil rapidly to reduce to about 1 cup.
Combine cornstarch and cold water; stir into hot mixture. Cook and stir till thickened and bubbly. Season with salt, if desired.
Steam spinach and keep warm.
To serve, slice tenderloin and serve with pineapple and spinach. Spoon peppercorn sauce atop.
Serves 6.

I cook mine at 350 for 45 mi in a bread pan.
