I know it's meaningless drivel and also edible entrails, but I could swear it's also a kind of fish. Help? Latin name if possible, please.

BTW If you don't know, entrails means inner organs. So I already know it's edible stomach lining!

Tripe is not a type of fish even though it sounds like it could be. It is the stomach lining of a cow and used by the French a lot and also poor households years ago. I hate it. It is usually boiled, cut and eaten with vegetables. The only good and delicious thing that I came up with it is to make a vegetable stock with the tripe and cook it for hours on a simmer was to strain the liquid, discard everything and I used the liquid for my base liquid in a black bean soup (not pureed style) it is unbelievable tasty.
