3 lbs pork loin roast
1 (14 1/2 ounce) can diced tomatoes with green pepper and onion
1 (10 3/4 ounce) can cream of mushroom soup
6-8 garlic cloves, minced
1 (2/3 ounce) envelope Italian salad dressing mix
2 teaspoons mixed Italian herbs
salt and pepper
place pork loin in crockpot.
in bowl mix everything.
pour over chops.
cook on low 6-8 hours.
serve with cooked pasta, rice or mashed potatos, salad and garlic bread.

This one is great......the pork gets a little dry (due to the fact that it is sooooooooooo lean) but the "gravy" that the crockpot makes while it's cooking takes care of any "dryness" Enjoy!!

Apricot Glazed Pork Loin........
1 can (10 1/2 oz.) Campbell's® Condensed Chicken Broth
1 jar (18 oz.) apricot preserves
1 large onion, chopped
2 tbsp. Dijon-style mustard
4 lb. boneless pork loin roast



Directions:



MIX broth, preserves, onion and mustard in 3 1/2-qt. slow cooker. Cut pork to fit. Add to cooker.

COVER and cook on LOW 8 to 9 hr.* or until done.

TIP: *Or on HIGH 4 to 5 hr.

For thicker sauce: Mix 2 tbsp. cornstarch and 2 tbsp. water until smooth. Remove pork from cooker. Stir cornstarch mixture into cooker. Cover and cook on HIGH 10 min. or until mixture boils and thickens.

Serve with Idahoan® Original Mashed Potatoes and steamed broccoli, cauliflower and carrots. For dessert serve apple-cranberry crisp.

If you like a mexican flare, just buy a can or two of green chili enchilada sauce put the roast in and cover with the sauce. I usually cook it until starts falling apart then warm up corn tortillas with some shredded cheese. Really easy and tastes great!
My kids even love it.
