In regards to the first posters response, both potatoes and plantains are rich in potassium and both have starches. If plantain chips are deep fried like I think they are (I know that banana chips are) then they are not any better for you than potato chips.

Yes very similiar to banana chips and if dipped in lemmon juice before being dehydrated first stay light instead of going brown.

Yes because it is rich in potassium. Potatoes have so much starch a raw material for sugar.
