If I left the egg out of a sugar cookie recipe, would they still be okay? Obviously I'm not a baker :-)

In an absolute emergency you can use mayonnaise in place of the eggs, but you would need to adjust the shortening. Also, I wouldn't try it with a mild recipe like sugar cookies, it would work better with something spicier.

No I hate to say it but, your batch off cookies is about to flop. Without the egg there is nothing to help it form a cookie consistancy. Since sugar cookies are mostly butter ,egg and sugar you will end up with a buttery mess.

Eggs are basically the glue which is going to hold your cookie together when baked. If you leave them out, the cookie will be very fragile both hot and cold.

Probably not. Eggs are used for the color, richness, and as a binder for the other ingredients. But maybe you'll enjoy them!

The cookies wouldn't stay together, they would fall apart.
