Itallian would be easier because it uses the roman alphabet like english does; if you learnt greek you'd have to learn a whole new alphabet too. Plus italian is a romance language so it is a lot like french and spanish (if you already speak one of those it'd be rather easy for you to learn italian) and anyway about 60% of english has romance roots anyway, so it would not be such a stretch.

Spanish is probably the easiest. But I've just finished my 2nd year of Latin and I love it! It takes a little bit of work to learn how to conjugate the verbs and decline the nouns but it comes naturally after a while. Also tons of English words come from Latin so the vocab is fairly easy to learn. And most scientific terms come from Latin which would be helpful if you want to get into med school. I also just finished French 2 and I'd say that Latin is a lot easier. Greek would be hard because you'd have to learn a new alphabet. I do ancient Greek and it's by far the hardest language I've ever done. I don't actually know anything about Italian haha. I'd go with Latin. Sorry it's so long lol

Italian for sure, not only are more of the words familiar, and the alphabet is the same (actually the Greek alphabet is easy and fun!), but more importantly the grammar is more complicated for English speakers - but not so bad if you already knew a language like German or Russian that also has cases.

BOB,
IF YOU'VE NEVER LEARNED A 2nd LANGUAGE, AND YOU SPEAK ENGLISH, ITALIAN IS YOUR BEST CHOICE. THE ALPHABETS ARE SIMILAR.
